How I like to bake a sweet potato:
After rinsing the sweet potato, pat dry and put it on a lined baking sheet. Make some incisions with a knife so the air that builds up can escape while it bakes. Once, I forgot to do this so the sweet potatoes exploded in the oven. Yes, the clean up was time consuming BUT upside was that I was left with a cleaner oven. This is a great example of why I believe everything happens for a good reason and things are always working in favor for us.
Bake in the oven at 400F for 1 hour or until the center is soft.
Simple salad idea to go with the baked sweet potato:
I love simple salads. The Dijon style mustard with a bit of maple syrup goes nicely with cucumber, tomatoes & arugula. Most of the time, I don’t use any dressings (creamy avocado does it for me) but this is my recent favorite when I want a little bit more.

Salad:
Arugula
Cucumber
Cucumber
Tomatoes
Avocado
Hemp seeds
Dressing:
2 Tbsp Dijon mustard
1-2 Tbsp Maple Syrup
Mix well.
*Adjust the taste to your liking by increasing/decreasing the amount of each.
