When a recipe idea in your head turns out delicious, that’s happiness in my book.I think I like this more than my vegan mac & cheese recipe. Hope you’ll give it a try.
Creamy Pasta Sauce
Ingredients:
(Sauce)
1.5 cups cashews, soaked in hot water for 1 hour1
14oz. organic extra firm tofu
1 cup plant milk
2 Tbsp arrowroot powder
1/2 tsp pink salt
3/4 tsp onion powder
3/4 tsp garlic powder
1 Tbsp apple cider vinegar
2 Tbsp chickpea miso
(Sauteed Veggies)
1/2 onion
2 cloves of garlic
1 package (5oz.) mushrooms
1 cup frozen peas
1/2-3/4 tsp Himalayan salt
1 tsp oregano (dry)
Black pepper to taste
1 cup packed spinach
Direction:
Blend the ingredients for the sauce and mix with the sauteed veggies, let the sauce get thicker over medium heat, turn off heat, add in the spinach and let it wilt with the heat from the sauce. Pour over your favorite pasta, mix well & enjoy!
Leftover is also delicious
