I started incorporating chia seeds into my diet after switching to a plant-based lifestyle. Despise being so small, chia seeds are packed with important nutrients. They are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium.
I like making chia pudding when the weather starts to warm up & making a parfait with the chia pudding, smoothie and homemade granola. My family loves to have it for dessert with a bit of homemade jam and/or granola.
Chia Pudding
Ingredients:
1/4 cup chia seeds
1 cup plant milk
1 Tbsp maple syrup
1 tsp vanilla flavoring
(Variation)
You can add 1 Tbsp of cacao/cocoa powder to make it chocolaty.
Direction:
Mix well and store in the fridge for 3-4 hours until chia seeds become plump. Enjoy as is or as part of a dessert.
