While we were in Canada, I had a delicious vegan poke bowl. The combination of watermelon & strawberries with other ingredients were so refreshing, I wanted to make my own after coming home.
I added cilantro and the combination with watermelon was so delicious. This is a great dish for warm summer days.
Vegan Poke Bowl
Ingredients:
1 cup Basmati rice (cooked with 2 cups water)
Sauteed mushrooms (seasoned with tamari)
Sauteed bean sprouts (seasoned with tamari & black pepper)
Sauteed frozen edamame/corn (seasoned with Himalayan salt)
Ssauteed zucchini (seasoned with Himalayan salt)
Tempeh bacon (marinate with a mixture of 2 Tbsp of maple syrup & tamari, and 1 tsp smoked paprika, bake at 350F for 30 minutes turning once)
Watermelon & strawberries
Garnish:
Spring onion
Cilantro
(Optional)
Coconut aminos for extra flavor
