I love the scent of lemon because it’s so uplifting.
I started making lemon cake at the end of last year and this combination of ingredients gave me the best consistency. I think it would make a nice birthday cake also.
I thought I was the only one in my family that loves lemon flavored things but apparently everyone is a big fan from watching how quickly the cake gets eaten every time.
Lemon Cake
Ingredients:
1 cup gluten free oat flour
1 cup almond flour
1/3 cup lemon juice
1/2 cup coconut sugar
1/2 cup maple syrup
Zest of a lemon or more
3/4 tsp baking soda
3/4 tsp pink salt
1 can full fat coconut milk
1-2 tsp vanilla flavoring
Direction:
Combine all the ingredients & pour the batter into a lined cake pan (I used a 9″ square cake pan). Bake at 400F for 40 minutes. Let it cool down and serve. The cake is perfect on its own (husband’s words) but adding coconut whip cream will simply elevate the experience.
