Plant-based eating has taught me many things. One of the things is how simplicity can be so delicious.
I was so happy when I came across this recipe online. Super simple ingredients make yummy cookies that remind me of fancy Japanese cookies.
If you bake for 12-15 minutes the cookies are crunchy on the 1st day but get softer after that. If you prefer them to be crunchy for many days (I’d be surprised if they last 4 days), bake them for 20-25 minutes.

What I use:
2 cups almond flour
1/2 tsp baking soda *recipe uses baking powder
1/3 cup maple syrup
2 tsp vanilla flavoring *recipe uses extract.
*(Optional):
1/4 tsp pink salt
Zest of 1 lemon – love the flavor it adds
1 tsp cinnamon
Directions:
Mix everything to form a dough. Roll about a tablespoonful and flatten a little bit. Optional: Wet a fork and press each to make a pattern.
Bake at 350F for 12-15 minutes or until cookies are golden brown. Cool & enjoy!
