Belgian Waffles

It was such a treat to make & enjoy a homemade waffle this morning. Something about waffles, they feel fancier than pancakes. Is it just me that feel this way?

For me, I think it’s because we have a favorite waffle restaurant that we go to once every couple of months and probably this is the reason why it feels special to me.

It took me a while to make my own because I wanted to make sure that the waffle maker was safe. Trying to heal my body from the inside out has not only been about changing the foods I put into my body but also things I use on a day to day basis including kitchenware. I learned about some danger of using nonstick pans early on so after doing some research, I switched to a safer pots and pans (I mainly use ceramic ones that are PTFE and PFOA free).

I learned that nonstick pots and pans are not always safe. Most of them are made of Teflon and when it gets heated over 500ºF, coating can break down leading to emission of toxic particles and gasses. Cooking temperature does not always exceed above 500ºF but knowing that things like that can happen, I did not want to take any risks.

The waffle maker I bought is this. It’s very affordable and ticked all the boxes.

Anyway, let’s get back to talking about the actual waffles.

The batter only produced 5 waffles. For someone so used to making 14 or pancakes on Sunday mornings, I was a bit worried that I may need to find something else to feed my family. It does not look like much but one waffle is quite satisfying so we were full from eating one each and I was relieved. So waffles are officially added to my breakfast menu.

Belgian Waffles
Makes 5, 7″ waffles

Ingredients:
1 banana, mashed
2 cups gluten free oat flour (blend the oats in a blender)
1 cup buckwheat flour (blend the groats in a blender)
1/2 tsp salt
1 tsp baking soda
2 tsp cinnamon
2 Tbsp coconut sugar
2 cups plant milk
1 tsp vanilla flavoring
1 Tbsp apple cider vinegar

Directions:
Mix everything and add apple cider vinegar at the end to create the batter.
Cook the waffles according to your waffle maker’s instructions and enjoy!
