Chocolate Chip Biscotti November 10, 2018 by Tamae I used to think that biscotti was a fancy treat you have at a cafe along with a cup of coffee. That changed when I learned how easy you can make it at home. Then it became one of my go to desserts to bring to a friend’s house or to a gathering.After I went plant based, I thought oil was a must to make it so didn’t even try to make a vegan version. One day, when I was making something ( I can’t remember what it was anymore), I accidentally put too much flour and ended up making biscotti. I was so happy to learn how to create another favorite of mine in a vegan way. I love the subtle taste of an orange in this recipe. Hope you will like it, too.Chocolate Chip BiscottiIngredients:1 banana, mashed1.5 cups buckwheat flour1/2 cup teff flour1 cup almond flour1/3 cup coconut sugar1/2 tsp pink salt1 tsp baking soda1/3 cup maple syrup1 tsp vanilla flavoring2/3 cup unsweetened coconut milk1 Tbsp apple cider vinegarZest of an orange1/2 cup vegan chocolate chipsDirections:Mix everything and add in the zest and chocolate chips at the end. Spread the dough onto a lined baking sheet, shape it into a log. Bake at 350F for 30 minutes. Let it cool down for half an hour to 1 hour. Slice them. Bake at 350F for 15 minutes cut side down, repeat the same for the other side. Let them cool and enjoy with your choice of warm drink.
