After I went plant based, I thought oil was a must to make it so didn’t even try to make a vegan version. One day, when I was making something ( I can’t remember what it was anymore), I accidentally put too much flour and ended up making biscotti. I was so happy to learn how to create another favorite of mine in a vegan way. I love the subtle taste of an orange in this recipe. Hope you will like it, too.
Chocolate Chip Biscotti
Ingredients:
1 banana, mashed
1.5 cups buckwheat flour
1/2 cup teff flour
1 cup almond flour
1/3 cup coconut sugar
1/2 tsp pink salt
1 tsp baking soda
1/3 cup maple syrup
1 tsp vanilla flavoring
2/3 cup unsweetened coconut milk
1 Tbsp apple cider vinegar
Zest of an orange
1/2 cup vegan chocolate chips
Directions:
Mix everything and add in the zest and chocolate chips at the end. Spread the dough onto a lined baking sheet, shape it into a log. Bake at 350F for 30 minutes. Let it cool down for half an hour to 1 hour. Slice them. Bake at 350F for 15 minutes cut side down, repeat the same for the other side. Let them cool and enjoy with your choice of warm drink.
