I am fully aware that to say this is a bit silly but I adore this bread so much. I like dense breads because you feel like you actually ate something. This one is one of those breads and is my go to for when I study for exams. It is packed with goodness so I feel nourished and a slice or 2 will keep me going. I would take this along if I was going hiking or on a long trip. Well, I hope you will enjoy it as much we do!
Fruit & Walnut Bread
*can be made nut free by omitting the walnuts.
Ingredients:
Flax “egg” – 2 Tbsp ground flaxseed + 5 Tbsp water, let it sit for 10-15 minutes
1 banana
1 cup plant milk (I normally use unsweetened coconut milk)
Oranges zest *preferably from organic oranges
2 small oranges peeled to be blended into juice (if using store bought, juice is about 1/2 cup)
2.5 cups gluten free oat flour
1 tsp baking soda
2 tsp cinnamon
1/2 tsp pink salt
1/4 cup to 1/3 cup coconut sugar (depends on your preference, I usually go with 1/4 cup)
1 Tbsp apple cider vinegar
1/2 cup dried apricots, chopped
1/2 cup dried figs, chopped
1/2 cup raisins
1/2 cup walnuts, break into small pieces
Direction:
- Set the oven to 400F.
- Blend the banana, plant milk, and peeled oranges for about 1 minute.
- Mix the oat flour, baking soda, cinnamon, salt and coconut sugar in a bowl.
- Combine flax egg, 1. & 2.
- Mix in the apple cider vinegar and let it sit while you chop the dried fruits and walnuts (I usually just break them apart with hands).
- Fold in the dried fruits, walnut pieces and the orange zest.
- Pour the batter into a lined bread pan.
- Bake for 50 minutes to an hour.
- Let the bread sit in the pan for 15 minutes then transfer it to a cooling rack. Let it cool down a bit more.
- Slice and enjoy!
Note: This bread goes well with apricot jam, vegan cream cheese, or can be enjoyed on its own.
