The soup I’m enjoying lately. It’s so simple yet very rich. The taste of green peas really comes through & the creaminess is so comforting.
Green Pea & Potato Soup
*Recipe inspired by “Green Pea Soup” (frommybowl)
Ingredients:
1 onion, diced
2 cloves of garlic
3 stalks of celery, chopped
2 bags of 16oz (464g) frozen green peas
3 medium size potatoes, peeled & diced
1/2 tsp pink salt
1/8 tsp black pepper
3 tsp dried parsley
2 tsp dill weed
Low-sodium vegetable broth, 4 cups or enough to cover the ingredients
1 can full fat coconut milk
(Optional Garnish)
Plant-based yogurt
Micro greens
Directions:
In a large pot, saute the garlic, onion & celery for 5 minutes with splash of water over medium heat. Add green peas & diced potatoes (more water if needed), season with pink salt, black pepper, parsley & dill. Add the broth and bring to boil. Lower the heat & simmer for 20 minutes. Add the coconut milk. Blend the soup and return to the pot to keep warm or serve with a drop of unsweetened coconut yogurt and some garnish (I used micro greens in this photo)
