Maple Glazed Carrots

Whenever I find a new way to enjoy a veggie, I get excited! This time, it was these mouthwatering Maple Glazed Carrots. I normally choose not to use oils in my cooking as it is not easy to remember the smoke point of all oils especially when you are under pressure to get meals ready and most importantly, I’ve found that cooking without oil is very possible. I also enjoy how you can taste the flavor of ingredients better this way. Well, before I go on and on about oil free cooking, I must jump into this recipe which uses oil. Well, just at the very end to add the shine. So I am open lately to using oil without heating it and in small amounts. Before I confuse you even more, let’s go to the ingredients.

It’s so simple yet a fun way to enjoy carrots.

🥕 Maple Glazed Carrots 🥕

Ingredients:
– Lots of carrots, peeled

For the marinade:
– 1/4 cup maple syrup
– 1/2 tsp smoked paprika
– 1/4 tsp onion powder
– 1/4 tsp garlic powder

Additional Ingredients:
– 1/4 tsp thyme

Optional:
– 1/2 cup walnuts, broken into small pieces
– Extra virgin olive oil

Direction:
Mix the ingredients for the marinade and coat the carrots. Put them in a lined roasting pan and sprinkle some thyme over.

Roast them in the oven at 375F for 30 minutes without interruption if you aren’t using walnuts. If you are using them, add them to the pan at the 20 minute mark and roast for 10 more minutes.

Coat them with a little bit of extra virgin olive oil after taking them out of the oven to add a little shine and serve in your favorite dish.

I sprinkled some dried parsley for color.
