On a rainy chilly Sunday like today, it was an easy decision to go with an oatmeal bake for breakfast.
Oatmeal Bake
Ingredients:
2 cups gluten free old fashioned rolled oats, soaked for 15 minutes in hot water (enough to cover the oats)
1/2 cup dates, soaked for 5 minutes & chopped
2 bananas, mashed
1/4 cup chopped walnuts (*omit for nut-free version)
1 cup of each – blueberries & strawberries
1/2 cup raisins
4 tsp cinnamon
3 Tbsp maple syrup
1/4 cup non-dairy milk (if the mixture looks dry, you can add another 1/4 cup)
Direction:
Preheat oven to 350 degrees F.
When the oats and dates are ready, mix everything together in a large bowl, pour the mixture into a 9×13 baking dish. Bake for 30 minutes.
(Notes)
* I have not had any problems with not greasing the baking dish but you can line or oil the baking dish.
* Leftovers are also delicious heated!
