It’s definitely an oatmeal raisin cookie kind of a day here in upstate NY (cloudy & cold).
Growing up in Japan, I never heard of oats. My life changed when I had my 1st oatmeal raisin cookie after coming to the US. And now, I think I’m made up of 70% oats from the amount of oat related foods I consume.
Oatmeal Raisin Cookies
Makes about 12 cookies
Ingredients:
(Wet)
1 banana, mashed
1 tsp vanilla flavoring
1/2 cup maple syrup
1/4 cup peanut butter
(Dry)
1 cups gluten free rolled oats
1 cups almond flour
1 tsp cinnamon
1/4 tsp pink salt
1 cup raisins
(Optional) Vegan chocolate chips (we add them depending on the mood)
Direction: Mix the wet & dry ingredients separately and combine until a dough forms. Drop a spoonful on a lined baking sheet and bake at 350F for 25-30 minutes. Baking time depends on how you like your cookies. Longer baking time will result in crunchy cookies.
