Here is a very simple salad that you can put it together quickly and makes you feel great.
I believe healthy eating should not be complicated because if it is, it will not be sustainable. My main wish for putting together a recipe blog is for the hope that whoever that reads it will leave feeling inspired to make better choices to eat healthy day after day because eating plant-based is easy, great for the environment and most importantly delicious.
For this simple salad, you can toss whatever greens you have with whatever veggies & beans you have on hand, drizzle some dijon mustard and maple syrup mixture over & mix gently. Always, don’t forget to savor each bite!
In the salad:
Arugula
Lettuce
Tomatoes
Cucumbers
Avocado
Olives
Kidney beans
Chickpeas
Topping:
Pecans
To make the Dijon Maple Dressing
Ingredients:
Maple syrup
Dijon mustard (I like Organicville’s Organic Dijon Mustard)
Start with 2 Tbsp of each, and gradually increase the amount so you can adjust the flavor to your liking. I normally use 3-4 Tbsp each.
