I love discovering delicious plant-based recipes. It seems to be endless so far. Here is a simple 3 ingredient crepe recipe I am making lately.
Simple Crepe Recipe
(Makes about 10 crepes)
Ingredients:
1 banana, mashed
1 cup buckwheat flour (I grind my own)
1.5 cups plant milk
If you want to make it sweeter, you could add the following but I personally don’t taste the difference.
(Optional)
1/2 tsp vanilla flavoring
1 Tbsp maple syrup
Direction: Heat about 1/4 cup of the batter on a skillet on medium heat until both sides have a nice brown color. In the picture, one has a layer of jam (maple syrup works well too) with chopped fruits, leftover chocolate mousse with strawberries, and middle one has spinach, avocado, cucumber and tomato. I like having both sweet & savory.
