I truly cherish the days I get inspired to create new things. Sometimes, it comes from remembering certain taste from the past, my own cravings, or just form looking at all the different recipes available on the internet.
Here is an oatmeal bake that I have been making lately on the weekends. I hope you will enjoy it as much as we are. It’s very simple to make (I guess this is nothing new with my recipes) and so satisfying.
Strawberry Apple Baked Oatmeal
Ingredients:
(dry)
2 cups gluten free old fashioned rolled oats
1 cup gluten free quick cooking oats
1/2 cup gluten free oat flour (I grind either rolled or quick cooking oats in a blender)
1/2 cup ground flaxseeds
2 Tbsp berry powder (I use Pure Synergy)
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp Himalayan sea salt
1/2 cup coconut sugar
(wet)
1/2 cup apple sauce
1 can (13.5 fl oz/398 ml) of full fat unsweetened coconut milk (I like Native Forest brand)
1 tsp vanilla flavoring
(add at the end)
1 apple, chopped
About 10-15 strawberries, cut into small pieces or slices (your choice!)
Direction:
Mix dry and wet ingredients separately and combine. Add the apple and strawberries into the batter. Transfer to a lined 9 x 13″ baking pan. Bake at 375F for 30 minutes. Let it cool down for 10 minutes in the pan and transfer to a cooling rack.
Enjoy with a little bit of maple syrup. I can see this being a dessert by topping it with coconut whip cream or homemade coconut ice cream.
