Current family favorite: Strawberry Apple Muffins.
Inspiration came one morning so I experimented with a combination of strawberries & apple. Even my 3 year old who is pretty hard to impress loves them so I thought it’s probably safe to share. Hope you will give this recipe a try.
Thank you for those that the reached out recently telling me that my recipes are helpful. It’s very surreal because I never thought of myself as a good cook. I always remember how impressed I was when a good friend of mine told me she cooked a dish with kale. Strawberry Apple Muffins
Ingredients:
1 banana, mashed
1.5 cups strawberries (I used frozen. Defrost then cut into smaller pieces)
1 apple, cut into small pieces
3 cups gluten free oats, blended into flour *if batter is too runny, add a little more but in general this will be on a runny side.
1 tsp cinnamon
1/2 tsp Himalayan salt
1/2 tsp baking soda
1 cup plant milk
1/3 cup maple syrup
1 tsp vanilla flavoring
1 Tbsp apple cider vinegar
Direction:
Mix everything and bake at 400F for 30-40 minutes (check the status at 30 min mark). Let them cool down for 5 minutes, then enjoy!
